3 cheese omelette with fresh herbs

The perfect way to feed your entire family at breakfast time!


 (Serves 1 - 2)

You'll need:

  • 1 tbsp. butter
  • Mix of fresh herbs (such as parsley, basil and sage)
  • Salt and pepper to taste
  • 4 large eggs
  • Feta cheese; half a round, crumbled
  • ½ cup Cheddar; grated
  • Pinch of Parmesan cheese
  • Small bunch of chives; chopped

Melt the butter in a non-stick pan and stir in the herbs. In a separate bowl, whisk the eggs and season well. Pour the eggs into the pan and with a rubber spatula constantly pull the set parts of the egg around the edge of the frying pan into the centre, until most of the liquid has been absorbed and the omelette is a lovely golden colour. Add the cheeses, fold a third of the omelette into the centre and then fold the remaining third onto this. Remove from the heat, cover with a lid until the cheeses have all melted and are heated through. Slide the omelette onto a serving plate. Scatter with the chopped chives, season again and serve with freshly chopped fruit and warm toast.
