3 delicious tips for Christmas leftovers

If you’ve run out of steam after slaving away to prepare your Christmas feast you can still rustle up a delicious, quick-’n-easy meal made with leftovers, says YOU food editor Carmen Niehaus.

Roast pork

Cut the meat into strips and fry with onion and garlic until the onion is soft. Add a spoonful or two of basil pesto and toss with pasta. Sprinkle with Parmesan cheese.

Christmas pudding

Crumblethe pudding, mix with smooth apricot jam and roll into balls. Dip in melted chocolate and chopped nuts and serve the truffles with coffee.


Spoon the trifle into ramekins or tartlet pans and sprinkle with sherry. Spoon a scoop of ice cream on top if desired. Make a meringue by beating together 3 egg whites and about 125 ml (½ c) caster sugar until stiff, and spoon on top of the tartlets. Heat under the oven grill until lightly browned.
