3 Great ideas with rooibos to add flavour to dishes

Rooibos is not just a refreshing beverage – use it to impart flavour to a variety of dishes.

  • Iced tea – prepare strong rooibos in a mug, sweeten to taste with honey and add a sprig of mint and a few slices of lemon. Leave to cool completely before chilling in the fridge.
  • Pork ribs – impart extra flavour to pork ribs by first cooking them in rooibos. Brush with sweet chilli sauce and cook in the oven or over coals until crisp.
  • Coleslaw – mix strong rooibos and a little mayonnaise (or Greek yoghurt) and honey. Drizzle over a carrot and cabbage mix, toss well and scatter toasted sunflower seeds on top. Serve with pork or chicken.
