Akni with mince

A fragrant rice dish for the whole family.

Serves 4-6

Preparation time: 10 min

Cooking time: 20 min

15 ml (1 T) oil

1 large onion, chopped

500 g extra-lean beef mince

10 ml (2 t) roasted masala

5 ml (1 t) garam masala

5 ml (1 t) ground coriander

5 ml (1 t) leaf masala

30 ml (1 T) tomato paste

5 ml (1 t) brown sugar

250 g frozen mixed vegetables (diced)

500 ml (2 c) Spekko Basmati rice, cooked (1 c uncooked makes 4 c cooked rice)

salt and pepper

fresh coriander to garnish

1 Heat the oil in a deep saucepan, add the onion and sauté until translucent.

2 Add the mince a bit at a time and stir-fry until brown.

3 Mix the spices with the tomato paste and sugar and add to the mince.

4 Stir to coat the mince with the masala mixture, add the vegetables, reduce the heat and simmer for 10 minutes.

5 Turn off the heat but keep the saucepan on the stove. Add the rice and stir through the mince until well combined.

6 Serve hot, garnished with fresh coriander.
