Apple tartlets

Makes 24 tartlets

Preparation time: 10 min

Baking time: 8-12 min

4 eggs

180 ml (¾ c) caster sugar

310 ml (1¼ c) cake flour

10 ml (2 t) baking powder

180 ml (¾ c) margarine, melted

1 can (400 g) baby apples, drained

Preheat the oven to 180 °C. Grease a muffin tin with food spray.

Rapidly whisk together the eggs and caster sugar with an electric beater until thick and pale.

Sift together the flour and baking powder and fold into the egg mixture.

Add the melted margarine and beat until just blended.

Fill each muffin-tin hollow with the batter and put a baby apple in the middle of each.

Bake for 8-12 minutes or until the tartlets are done.

Leave to cool and serve with tea.
