Asparagus and cheese rolls

Anell Barnard of Cape Town's asparagus and cheese rolls are rich in colour and taste - guaranteed to become a firm favourite.

Serves 4-6

Preparation time: 5 min

Cooking time: 5 min

125 ml (½ c) mayonnaise

25 ml (½ c) Greek yoghurt

250 ml (1 c) cheese of your choice, grated

salt and freshly ground black pepper

6 ciabatta rolls, sliced open (in half)

250 g asparagus, blanched and halved lengthwise

Preheat the oven to 180 °C

  1. Mix the mayonnaise, yoghurt and cheese and season with salt and pepper.
  2. Place the rolls on a baking sheet and dish a tablespoon full of the cheese mixture on each half. Add a layer of asparagus, then another tablespoon full of the cheese mixture.
  3. Turn the oven onto grill and grill the rolls for 5 minutes or until the cheese has melted. Serve with a salad.
