Avo, Nut and Crisp Bacon Salad

Cooking time: 15 min

Serves: 4 – 6

250 g bacon, cut into pieces

1 pack of mixed salad leaves

6 spring onions, chopped

1 avocado, cut into cubes

3 boiled eggs, sliced

125 ml (½ c) pecan nuts, roughly chopped

juice of 1 lemon

salt and freshly ground black pepper

Fry the bacon in a pan until crispy.

In a big salad bowl, throw in the salad leaves, bacon and spring onions and toss.

Add the avo, eggs and nuts.

Season with lemon juice, salt and pepper.

Serve with croutons.
