Bacon and tomato slices

Serves 4

250 g bacon

2 large, ripe tomatoes

100 g feta cheese

1 large ciabatta

80 ml (? c) mayonnaise

1 Fry the bacon in a heated pan until crisp. Drain on paper towels.

2 Slice the tomatoes thinly.

3 Crumble the feta cheese and set aside.

4 Halve the ciabatta loaf lengthwise and spread the bottom with mayonnaise.

5 Arrange the bacon, tomato and feta cheese on the mayonnaise layer and top the filling with the other half of the loaf.

6 Toast the loaf in a large sandwich press or put it in an oven preheated to 200 °C for 5 minutes or until hot.

7 Slice and serve hot.
