Bacon rolls

6 pork fillets

salt and pepper to taste

30 ml wholegrain mustard

30 ml butter

1 onion, finely chopped

1 clove garlic, finely chopped

6 brown mushrooms, finely chopped

30 ml finely chopped fresh parsley

250 g Enterprise Traditional Picnic Ham, cut into small pieces

100 ml grated mozzarella cheese

250 g Enterprise Streaky Bacon

30 ml cooking oil

Preheat the oven to 180 °C.

Put the pork fillets on a chopping block or any flat surface and flatten with a meat mallet or the back of your hand.

Season with salt and pepper to taste and spread wholegrain mustard over each fillet.

Melt the butter in a pan and fry the onion and garlic until soft and fragrant.

Add the mushrooms and parsley to the pan and simmer until the liquid has evaporated.

Add the chopped ham and stir for one minute.

Remove the pan from the stove and let it cool.

Put a spoonful of the mixture in the middle of each flattened fillet, sprinkle mozzarella cheese on top and roll up the fillet.

Wrap a rasher of bacon around each roll and secure the ends with a toothpick.

Heat the cooking oil and fry the rolls until golden brown.

Put the rolls in an ovenproof dish and bake for 10-15 minutes or until done.

Serve with creamy mashed potatoes.
