Baked brinjal rolls

3 large brinjals 30 ml olive oil 1 onion 2 cloves garlic 1 large red pepper 250 ml brown mushrooms 1 can (410 g) chopped tomatoes 5 ml soft brown sugar Salt and freshly ground black pepper 60 ml fresh herbs such as oregano and basil 200 g feta cheese, crumbled 100 g Parmesan cheese, grated

Preheat the oven to 180 °C and grease a medium-sized ovenproof dish.

Cut the brinjals into thin slices and brush with a little of the oil on both sides.

Heat a pan, fry the brinjals slices until golden and set aside.

Roughly chop the onion, garlic, red pepper and mushrooms. Heat the remaining oil and fry the vegetables for a few minutes.

Add the tomatoes, sugar, salt, pepper and herbs and simmer for about 10 minutes.

Arrange the brinjal slices on a work surface and divide the feta cheese among them. Roll up and arrange in the prepared dish.

Pour the tomato sauce over the rolls, sprinkle the Parmesan cheese on top and bake for 20 minutes.
