Baked cheese chicken breasts

Serves 4

4 large chicken breasts

Salt and freshly ground black pepper

80-100 ml raw polenta

30 ml (2 T) olive oil

100 g goat or feta cheese

80 g gruyere or parmesan cheese

250 g broccoli

Preheat the oven to 180 °C and flatten the breasts a little with a meat hammer or your hand.

Season the breasts with salt and pepper and roll each one in the polenta.

Heat the olive oil and fry the breasts until browned on both sides.

Place them on a buttered baking tray.

Slice the feta, grate the gruyere and divide the cheeses between the breasts.

Sprinkle with extra oil and bake for about 20 minutes or until cooked.

Steam the broccoli and serve with the chicken.
