Baked fish

A fresh, colourful variation with versatile fish

Serves 6

Preparation time: 10 min

Cooking time: 40 min

25 g butter

1 onion, finely chopped

3 garlic cloves

600 g potatoes, peeled and cubed

410 g (1 can) chopped tomatoes

250 ml (1c) chicken stock

200 g pitted olives

1 kg hake, cubed

handful coriander, chopped

1      Preheat the oven to 180 °C. Melt the butter in a large roasting pan over medium heat. Cook the onion for 5 minutes, add the garlic and potatoes and mix well with the onion.

2      Stir in the tomatoes and pour over the stock and olives. Place in the oven for 20 minutes or until the potatoes are cooked.

Add the fish to the roasting pan, spoon over some of the liquid and return to the oven for 10 minutes. Sprinkle with the coriander and serve.
