2 kg chicken pieces
5 potatoes or baby potatoes
1 kg other vegetables of your choice such as mushrooms, baby marrows and patty pans
250 ml (1 c) balsamic vinegar
30 ml (2 T) olive oil
60 ml (¼ c) honey
4 rosemary sprigs
salt and freshly ground black pepper to taste
Preheat the oven to 180 °C.
Arrange the chicken pieces, potatoes and other vegetables in an ovenproof dish.
Mix the remaining ingredients and pour the mixture over the chicken and vegetables.
Season with salt and freshly ground black pepper.
Cover the dish with aluminium foil and bake for 45 minutes or until the chicken is done and the vegetables are tender.
Remove the foil, switch on the oven grill and grill the chicken until golden.
Serve with wheat or basmati rice.
