BBQ ribs

Bring it on - sticky fingers heaven!

Serves 6 or more

Preparation time: 5 min

Cooking time: 1 hour 45 min

2 kg pork ribs

60 ml (¼ c) barbeque spice

80 ml (? c) lemon juice

125 ml (½ c) red wine

80 ml (? c) chutney

250 ml (1 c) cola

2 ml (½ t) mustard powder

5 garlic cloves, sliced

45 ml (3 T) tomato paste

80 ml (? c) water

boiled garlic potatoes to serve

1.    Put the ribs in a large pot and cover with water. Gently simmer for 30 minutes, take off the heat and leave to cool in the water for 30 minutes.

2.    Preheat the oven grill to medium.

3.    In a blender blitz the remaining ingredients except the potatoes until well mixed.

4.    Transfer the ribs from the water to a baking tray, brush all over with the basting sauce and grill for 45 minutes, basting and turning occasionally.

5.    Cut into riblets and serve with the potatoes.
