Bean soup

A keeper, especially for those cooler days that sometimes surprises us in summer

Serves 3

Preparation time: 10 minutes

Cooking time: 20 minutes

45 ml (3 T) oil

1 onion, chopped

15 ml (1 T) paprika

2 cloves

50 g tomato paste

125 ml (½ c) water

zest of 1 lemon

1 can (400 g) sugar beans, drained

5 ml (1 t) pepper


1    Heat the oil in a saucepan and sauté the onion, paprika and cloves until the onion is soft and slightly caramelised.

2    Add the tomato paste and cook for 3 minutes. Add the water and lemon zest and simmer for about 10 minutes.

3    Add the beans and season with the pepper and salt. Simmer for 10 minutes or until thickened. Serve with crispy bread
