15 ml (1 T) oil
500 g beef, cut into strips
1 red pepper, sliced
1 packet (56 g) Thai curry cook-in sauce
15 ml (1 T) peanut butter
250 ml (1 c) roasted peanuts
salt and pepper
125 ml (½ c) bean sprouts
15 ml (1 T) fresh coriander to garnish
1 Heat the oil in a large frying pan over high heat and brown the beef strips. Remove and set aside. Return the pan to the stove, reduce the heat to medium and add the pepper. Stir in the curry sauce and water as specified on the packet instructions.
2 Return the beef to the pan. Add the peanut butter and simmer for 10 minutes. Sprinkle the peanuts on top and cook for another 15 minutes.
3 Season with salt and pepper and top with the bean sprouts and coriander. Serve with crispy bread or poppadums.
