Beef stir-fry with orange and noodles

Serves 6

500 g steak

salt and freshly ground black pepper

30 ml (2 T) oil

1 red onion, sliced

1 each green and red pepper, sliced

2 carrots, chopped

875 ml (3½ c) broccoli florets

2 garlic cloves, minced

5 ml (1 t) grated fresh ginger

2 ml (½ t) orange zest

125 ml (½ c) freshly squeezed orange juice

30 ml (2 T) soy sauce

cooked noodles to serve

1    Heat a large frying pan or wok over high heat. Season the steak with salt and pepper. Add the oil to the pan and fry the steak until browned and done to your liking, 5-6 minutes. Transfer the steak to a plate and set aside.

2    Add the onion, peppers, carrots and broccoli to the pan and cook for about 7 minutes or until done but still crunchy.

3    Add the garlic, ginger, orange zest, juice, soy sauce and noodles and continue cooking for 2 minutes.

4    Slice the steak, add to the pan and heat through. Serve immediately.
