Beer and garlic mussels

Cooking time: 10-15 min

30 ml (2 T) butter

1 onion, finely chopped

3 cloves garlic, finely chopped

100 ml fresh herbs such as chives and thyme, finely chopped

salt and freshly ground black pepper

330 ml beer

500 g open-shelled mussels

250 ml (1 c) cream

Melt the butter and sauté the onion and garlic for a minute.

Stir in the herbs, salt and pepper, pour in the beer and mussels and cover with a lid.

Cook for a few minutes until the mussels are just done – about 3 minutes.

Remove the mussels and add the cream to the beer mixture.

Bring to the boil and simmer for 5 minutes or until the sauce has reduced by half.

Pour over the mussels and serve with bread if desired.
