Bessie’s chicken dish

Bessie de Kock's easy chicken dish - a treat any day of the week

Preparation time: 15 min

Cooking time: 50 min

Serves 4-6


45 ml (3 T) tomato sauce

30 ml (2 T) Worcester sauce

30 ml (2 T) chutney

15 ml (1 T) salt

2,5 ml (½ t) ground pepper

250 ml (1 c) white wine


45 ml (3 T) olive oil

3 onions, sliced

1 big chicken, cut into pieces/6 mixed chicken portions

60 ml (¼ cup) sago

500 g long-stem broccoli

250 g mushrooms, sliced

250 g bacon strips

Preheat the oven to 180°C.

Sauce Mix all the ingredients for the sauce together and set aside.

Chicken Heat the oil in a pan, brown the onions and set aside.

Layer an ovenproof dish with the chicken, then the onions, sago, broccoli and mushrooms.

Layer the strips of bacon over the mushrooms, ensuring they’re packed tightly together.

Pour the sauce over and cover with foil. Cook in the oven for 50 min. Serve with pasta or rice.
