Biltong salad

1 packet of baby lettuce or herb greens

1 packet (30 g) of fresh coriander

8 red spring onions or ½ red onion, chopped (optional)

handful of chives (optional)

200 g moist biltong

1 roll of Chevin goat’s cheese, sliced

4-5 medium-size preserved figs

125 ml (½ c) raw cashew nuts and pumpkin seeds, toasted in a dry pan


80 ml (? c) olive oil

30 ml (2 T) balsamic reduction

15 ml (1 T) plain balsamic vinegar

5 ml (1 t) mustard powder

15-20 ml (3-4 t) caster sugar

10 ml (2 t) chopped coriander

5 ml (1 t) freshly ground black pepper

Mix the salad ingredients in a large salad bowl.

Whisk together the salad dressing ingredients and add just enough of the dressing to moisten the salad.

Toss and chill until just before serving.
