World-renowned pastry chef Michel Roux has made a career out of taking ordinary desserts and turning them into exotic pieces of culinary art, and here he shows exactly how he does it.

He offers step-by step instructions for a dazzling array of recipes – from the simplest crème anglaise to the most complicated of soufflés.

The panna cotta recipe and the ginger crème brûlée were winners in my household, while the moist chocolate brownies proved irresistible and took less than 45 minutes to make!
