Book: The Family Meal by Ferran Adria

Ferran Adrià became renowned for the rarefied gastronomic creations – fish wrapped in candy floss, pine cone mousse – he served in his legendary elBulli restaurant in Spain, which sadly closed last year.

This fantastic cookbook comprises the recipes he and his 75 staff members (the “family”) would eat before service each day and they translate brilliantly into the home: everyday ingredients, simple recipes and a budget in mind.

Pictures take centre stage with each recipe photographed step by step.

Each of the 31 menus – for example peas and ham, roast chicken with potato straws and pineapple with molasses and lime – are introduced with a beautiful picture of the array of ingredients, accompanied by a preparation timeline.

Quantities are given for two, six, 20 and 75 people, making recipes adaptable for everyone from couples to caterers.

A few ingredients may be hard to track down but for the most part this deserves to be a well-thumbed book in anyone’s kitchen.
