Brilliant blueberry crumpets

Who doesn’t like crumpets? They’re normally a firm favourite with kids and moms (and dads) alike! Try this delicious recipe from Checkers.


375 ml (1½ c) milk

1 egg

10 ml (2 t) vanilla essence

500 ml (2 c) self-raising flour

large pinch of bicarbonate of soda

80 ml (? c) caster sugar

250 ml (1 c) fresh or frozen blueberries

30 g butter

1 lemon

1 tub mascarpone

5 ml (1 t) vanilla paste

honey for serving


  1. Whisk milk, egg and vanilla essence together.
  2. Sift flour and bicarbonate of soda into a separate bowl and stir in the caster sugar.
  3. Make a well in the centre and pour in the milk mixture. Whisk until just combined, then add the blueberries.
  4. Heat a large nonstick frying pan over a medium heat. Add a little butter to the pan. Spoon 2 heaped tablespoons of the mixture into the pan and cook for 2-3 minutes or until bubbles appear on the surface. Flip and cook for a further 2 minutes or until cooked through.
  5. Remove, cover with foil and set aside. Repeat with the remaining mixture.
  6. Zest the lemon into the mascarpone, add the vanilla paste and stir through.
  7. Serve the crumpets piping hot with a scoop of lemon mascarpone and a drizzle of honey.
