Brinjal Thai green curry

Serves 4

15 ml olive oil

1 onion, chopped

2 garlic cloves, chopped

30 ml Thai green curry paste

2 -3 sweet potatoes, cubed

2 brinjals, cubed

180 ml coconut milk

salt and freshly ground black pepper

fresh coriander, chopped

1.    Heat the oil in a saucepan and fry the onion and garlic for 3-5 min.

2.    Stir in the curry paste and blend well with the onion mixture.

3.    Add the sweet potatoes and cook over medium heat for 15 min or until the potatoes are nearly soft.

4.    Add the brinjals and coconut milk and simmer over low heat for 5-10 min. Season with salt and pepper.

5.    Sprinkle with fresh coriander and serve.
