Calamari stew with tomatoes

Try out this lovely calamari dish packed with interesting flavours.

Serves 6

Preparation time: 15 min

Cooking time: 1 hour 15 min

45 ml (3 T) oil

1 onion, sliced

1 red chilli, chopped

2 fennel bulbs, chopped

3 garlic cloves, chopped

30 ml (2 T) tomato paste

250 ml (1 c) red grape juice

1 star anise

1 can (410 g) tomato purée

30 ml (2 T) sugar

1 cinnamon stick

500 g calamari, cleaned, sliced and tentacles chopped

salt and pepper

1 Heat the oil in a saucepan over medium heat. Add the onion, chilli and fennel and stir-fry until the vegetables begin to colour. Add the garlic and tomato paste and cook for 2 minutes, stirring.

2 Add the grape juice and simmer until reduced slightly.

3 Add the star anise, tomato purée, sugar and cinnamon stick. Stir in the calamari and simmer for 1 hour or until the calamari is tender.

4 Season with salt and pepper and serve with crusty bread.
