Cheesy baked chicken

Budget-friendly and so easy to make!

SERVES 4-6 Preparation: 15 min Cooking: 35-45 min

  • 6- 8 chicken pieces (thighs and legs)
  • salt and pepper
  • 60 ml (¼ c) butter
  • 30 ml (2 T) cake flour
  • 500 ml (2 c) milk
  • 15 ml (1 T) mixed herbs
  • 125 ml (½ c) grated Cheddar cheese
  • 125 ml (½ c) grated mozzarella cheese
  • 125 ml (½ c) breadcrumbs
  • 5 spring onions, chopped

Preheat the oven to 180 °C and grease an ovenproof dish.

1 Arrange the chicken in the prepared dish and season with salt and pepper.

2 In a small saucepan, heat the butter until just melted, add the flour and stir to make a paste. Pour in the milk while slowly whisking until the sauce thickens.

3 Remove the sauce from the heat and add the herbs and 60 ml (¼ c) of each cheese.

4 Pour the sauce over the chicken, sprinkle the breadcrumbs and remaining cheese on top. Bake in the oven for 35-45 minutes oruntil the chicken is cooked.

5 Garnish with the chopped spring onions and serve with roast vegetables.
