Cheesy tuna-mayo quesadillas

Keep a packet of tortillas in your fridge.

Serves 4.

8 large tortillas

2 cans (170 g each) tuna, drained

80 ml (1/3 c) thick mayonnaise

125 ml (1/2 c) grated mozzarella

4 gherkins, finely chopped

Salt and freshly ground black pepper to taste

Oil, for shallow frying

Put 4 of the tortillas on a work surface.

Mix the tuna, mayonnaise, mozzarella and gherkins and season with salt and pepper to taste.

Divide the mixture among the 4 tortillas and cover each with one of the 4 remaining tortillas.

Heat a little oil in a large pan and fry one of the quesadillas on both sides until crisp and golden.

Repeat with the remaining quesadillas.

Cut into quarters while still hot and serve immediately with a mixed salad.
