Chicken casserole

Go quick and easy with this chicken casserole recipe.

  • 15 ml (1 T) oil
  • 2 onions, chopped
  • 4-6 chicken pieces
  • salt and pepper
  • 1 butternut, peeled and cubed
  • 250 ml (1 c) cream
  • 125 ml (½ c) chicken stock
  1. Preheat the oven to 180 °C. Heat the oil and fry the onions until golden. Remove from the pan and set aside.
  2. Season the chicken with salt and pepper and brown in the same pan.
  3. Arrange the chicken, onions and butternut in an ovenproof dish. Pour over the cream and stock, cover with foil and bake for about 60 minutes or until done.
  4. Serve with rice and fresh rocket.
