Chilli chicken with dirty rice

An aromatic, spicy chicken treat - perfect for days when you don't want to spend hours in the kitchen

Serves 6-8

Preparation time: 5 min

Cooking time: 30 min

8 chicken pieces

30 ml (2 T) curry paste

15 ml (1 T) oil

1 green pepper, diced

4 spring onions, chopped

60 ml (¼ c) tomato purée

15 ml (1 T) paprika

500 ml (2 c) rice, cooked

1 Heat the oven to 200 °C.

2 Slash the flesh of the chicken with a sharp knife. Rub the curry paste over the chicken and into the slits. Transfer to a baking sheet and roast for 20 minutes. Increase the heat to 220 °C and cook for another 10 minutes or until the skin is crispy.

3 Heat the oil in a pan and sauté the pepper and spring onions for 3 minutes. Add the tomato purée and paprika and cook for another 3 minutes. Tip in the rice and stir until well coated. Serve the chicken on the rice.
