Chocolate cake pudding

Less than an hour to decadent chocolate heaven!

Makes 12 squares

Preparation time: 10 min

Baking time: 45 min 

250 ml (1 c) flour

375 ml (1 ½ c) sugar

1 ml (¼ t) salt

10 ml (2 t) baking powder

60 ml (¼ c) cocoa powder

125 ml (½ c) boiling water

125 ml (½ c) oil

4 eggs, separated

1 can (380 g) evaporated milk

big slab (180 g) Cadbury hazelnut milk chocolate

  1. Preheat the oven to 180 °C. Grease a 30 cm square baking tin with nonstick spray.
  2. In a bowl, sift the dry ingredients together.
  3. In a separate bowl whisk together the boiling water, oil and egg yolks. Add to the dry ingredients and mix well.
  4. Beat the egg whites in a separate bowl with an electric beater until stiff peaks form and fold into the cake batter. Pour into the prepared baking tin.
  5. Bake for 45 min or until a skewer inserted in the middle comes out clean.
  6. Boil the evaporated milk until it has reduced by half and melt the chocolate in the microwave.
  7. When the cake comes out of the oven, poke a few holes in the top, pour over the evaporated milk then the melted chocolate.
  8. Serve warm or at room temperature.
