Chocolate chip cupcakes

You probably already have all the ingredients you need to make these spongy, chocolaty treats!

Makes 12 Cupcakes Preparation time: 20 min Baking time: 20 min

  • 115 g butter
  • 70 g caster sugar
  • 30 g brown sugar
  • 2 eggs
  • 215 g cake flour
  • 5 ml (1 t) baking
  • powder
  • Pinch of salt
  • 125 ml (½ c) milk
  • 100 g chocolate chips

Preheat the oven to 180 °C Line 12 muffin tin hollows with cupcake cases. Grease with nonstick spray

1 Cream the butter and sugars together until pale and creamy. Beat in the eggs one by one.

2 Sift together the flour, baking powder and salt. Gradually fold the dry ingredients and milk alternately into the butter mixture Add half of the chocolate chips and mix lightly.

3 Divide the mixture among the muffin hollows and sprinkle the remaining chocolate chips on top.

4 Bake for 20-25 minutes or until a skewer inserted in the middle of the cupcakes comes out clean.
