- 625 ml (2½ c) flour
- 15 ml (1 T) baking powder
- 5 ml (1 t) bicarbonate of soda
- a pinch of salt
- 100 g chocolate chips
- 114 g butter, melted
- 250 ml (1 c) castor sugar
- 2 eggs
- 250 ml (1 c) milk
- 15 ml (1 T) vanilla essence

Preheat the oven to 220 °C. Grease a 12-cup muffin pan.
1. In a large bowl, mix the flour, baking powder, bicarbonate of soda, salt and 50 g chocolate chips. Set aside.
2. In a medium bowl, whisk together the melted butter, sugar, eggs, milk and vanilla essence. Slowly add to the dry ingredients. Gently fold together until just combined.
3. Divide the batter between the 12 muffin cups. Sprinkle over the remaining chocolate chips and bake for 5 minutes, then turn the oven heat down to 180 °C and bake for another 10 minutes. Let cool for about 5 minutes and enjoy warm.
