Ciabatta with chicken

A delicious light meal – similar to the Cheezas you used to get at Juicy Lucy. The chicken is mixed with mayonnaise and tomato sauce, placed on ciabatta and topped with avocado and cheese, which you melt quickly in the oven.

4 chicken breasts (500 g), deboned and skinless

60 ml Kraft mayonnaise

60 ml tomato sauce

2 spring onions, thinly sliced

20 ml chopped fresh parsley

2 ciabattas, sliced in half lengthways

1 firm, ripe avocado, peeled and sliced

salt and freshly ground black pepper to taste

4 slices Cheddar cheese

ground paprika

Preheat the grill.

Cook the chicken breasts your favourite way.

Cut each breast into 4 long strips.

Mix the mayonnaise, tomato sauce, half the spring onions and the parsley.

Place the ciabatta halves on a baking sheet and toast lightly.

Spread each half with the mayonnaise mixture.

Add the chicken and avocado and season to taste with salt and pepper.

Top with the cheese and sprinkle with the rest of the spring onions and the paprika.

Grill for 1 to 2 minutes until the cheese has melted.

Serve immediately.

Serves 4.

MONEYWISE TIP Use Portuguese rolls instead of ciabatta.
