Cinnamon apple pull-apart bread

Apple and cinnamon were made for each other – and they come together beautifully in this bread. It’s delicious as is but glaze with a quick sugar syrup if you want it sweeter or serve it with butter if you like.

Serves 4-6 Rising: 1½ hours Preparation: 20 min Baking: 40 min

  • 60 ml (¼ c) warm water
  • 10 ml (2 t) dry yeast
  • 80 ml (? c) milk
  • 5 ml (1 t) vanilla essence
  • 60 g butter, melted
  • 700 ml flour
  • 60 ml (¼ c) sugar
  • 2 ml (½ t) salt
  • 2 eggs


  • 200 ml brown sugar
  • 10 ml (2 t) cinnamon
  • pinch of salt
  • 50 g butter, melted
  • 3 green apples, cubed

Grease a 23 x 13 x 7 cm loaf tin.

1 Combine the warm water and yeast in a small bowl. In a separate bowl stir the milk, vanilla essence and melted butter to combine. Set aside.

2 Mix the flour, sugar and salt in a large bowl. Stir in the yeast mixture, then add the eggs. Gradually add the butter mixture in a thin stream to form a soft but firm dough. If the dough is too slack, add extra flour by the tablespoon until the dough holds its shape. Cover and set aside to rise in a warm place for 1 hour.

3 Filling: Meanwhile, mix the brown sugar, cinnamon and salt in a small bowl.

4 Turn out the risen dough onto a floured surface and roll into a 60 cm square. Brush with the melted butter. Sprinkle the entire surface with the cinnamon sugar mixture.

5 Cut the dough into equal-sized strips, about 10 x 60 cm. Sprinkle one strip with 60 ml (¼ c) chopped apples. Lay another strip on top and sprinkle more apple over. Repeat until all the strips have been stacked.

6 Cut the stacked strips into 6 equal stacks of squares. Arrange the squares vertically in the prepared loaf tin. Cover with a kitchen towel and set aside to rise for 30 minutes.

7 Preheat the oven to 180°C.

8 Bake the bread on the middle rack of the oven for 40 minutes or until golden brown and done (a skewer inserted in the middle should come out clean). If the bread browns too quickly on top before it’s done in the middle, cover loosely with foil for the remainder of the cooking time.
