Cold mustard chicken

This is perfect as a light meal or if you want to make something special with left over chicken.

Serves 4

Preparation time: 15 min

Cooking time: 30 min

1 whole cooked chicken


15 ml (1 T) oil

30 ml (2 T) chopped onion

10 ml (2 t) curry powder

5 ml (1 t) dry mustard powder

60 ml (4 T) red wine

30 ml (2 T) water

1 bay leaf

30 ml (2 T) sugar

freshly ground black pepper

2 thin slices lemon

15 ml (1 T) lemon juice 1 ml (¼ t) salt 15 ml (1 T) smooth apricot jam 125 ml (½ c) mayonnaise 250 ml (1 c) cream or plain yoghurt

  1. Place the cooked chicken in a serving dish.
  2. Heat the oil and fry the onion until golden. Add the curry and mustard powders and fry for 2 minutes.
  3. Add the other ingredients, except the mayonnaise and cream or yoghurt. Leave to cool and remove the lemon slices.
  4. Gradually stir in the mayonnaise. Whip the cream or yoghurt slightly and add.
  5. Pour the dressing over the chicken and serve with a salad.
