Cold potato and sausage salad

Serves 4

600 g baby potatoes

Oil for shallow frying

4-6 (250 g) smoked pork sausages with cheese

300 g baby marrows, cut into chunks

about 20 pitted olives


30-40 ml olive oil

15 ml prepared mustard

Juice and zest of 1 lemon

Salt and freshly ground black pepper

1. Cook the potatoes in salted water until soft. Drain and halve them.

2. Heat the oil in a pan and fry the sausages until done. Remove from the pan and set aside.

3. Fry the baby marrows in the same pan for a few minutes and season with salt and pepper.

4. Cut the sausages into smaller pieces and mix with the potatoes, baby marrows and olives.

5. Mix the salad dressing ingredients. Drizzle over the potato salad and toss.
