Cream cheese and asparagus pasta

Serves 4

250 g spaghetti

200 g asparagus

250 ml (1 c) cream cheese

100 ml milk

Rind of 1 lemon, grated

1 chilli, chopped

Salt and freshly ground pepper

60 ml (¼ c) Parmesan cheese, grated

1 Boil pasta in salted water until al dente, drain and set aside.

2 Cut the asparagus into pieces and steam in the microwave for 3-5 minutes until tender and done.

3 Heat the cream cheese and milk in a deep pan, add the asparagus and season with the lemon rind, chilli, salt and freshly ground pepper.

4 Stir the cooked spaghetti through the asparagus mixture.

5 Sprinkle with parmesan cheese and serve immediately.
