Serves 4-6
800 g pork strips
salt and freshly ground black
pepper
15 ml (1 T) olive oil
15 g butter
3 leeks, finely chopped (or 1 onion, quartered)
250 g mushrooms, quartered
250 ml (1 c) cream or yoghurt
30 ml (2 T) sherry
250 g tenderstem broccoli, cut into pieces
Season the pork with salt and freshly ground black pepper.
Heat a little of the oil and butter and fry the pork strips in batches over very high heat.
Remove the meat from the pan and set aside.
Heat the remaining olive oil and butter and fry the leeks (or onion) and mushrooms for a few minutes.
Add the cream or yoghurt and sherry and bring the mixture to the boil.
Reduce the heat and simmer the sauce for about 5 minutes or until it begins to thicken.
Return the pork strips to the pan and add the broccoli.
Heat for a few minutes, adjust the seasoning if necessary and serve with a green salad and whole sweet potatoes.
TIP For a healthier option use plain yoghurt instead of cream.
