Crumbed chicken strips with avocado dip

4 chicken fillets, cut into thin strips


2 egg whites

4 slices wholewheat bread, processed into fine crumbs

45 ml (3 T) finely grated Parmesan cheese

15 ml (1 T) oil

15 ml (1 T) dried parsley

Preheat the oven to 220 °C and line a large baking sheet with aluminium foil.

Pat the chicken strips dry and season lightly with salt.

Whisk the egg whites until frothy.

Combine the breadcrumbs, Parmesan cheese, oil and parsley and spread the mixture evenly on a plate.

Dip the chicken strips in the egg white and roll in the crumb mixture.

Place the chicken strips on the baking sheet and grill for about 7 minutes a side or until golden and done.

Serve with avo dip.

TIP: We used egg whites instead of yolks and grilled instead of deep-fried these delicious strips.
