Cucumber-and-melon salad

Serves 4- 6


1 sweet melon, diced

200 g baby tomatoes, halved

1 big cucumber, sliced into ribbons with a peeler

15 ml (1 T) fresh parsley, chopped

15 ml (1 T) fresh chives, chopped

15 ml (1 T) fresh mint, chopped


60 ml (¼ cup) white wine vinegar

60 ml (¼ cup) olive oil

15 ml (1 T) caster sugar

salt and freshly ground black pepper


Combine the melon, tomatoes and cucumber in a large salad bowl, sprinkle the fresh herbs over and toss the salad well.


Whisk the dressing ingredients and pour it over the salad.

Refrigerate the salad for an hour or more before serving. Serve with chicken, meat or fish.
