CHICKEN BREASTS
5 ml (1 t) turmeric
5 ml (1 t) curry powder
5 ml (1 t) ground coriander
5 ml (1 t) ground cumin
80 ml flour
salt and freshly ground black pepper
1 chilli, finely chopped (optional)
30 ml (2 T) chopped fresh coriander
4 chicken breasts, skinned and deboned
oil for shallow-frying
TZATZIKI
1 small cucumber, grated
250 ml (1 c) plain yoghurt
4 cloves garlic, finely chopped
salt and freshly ground black pepper
BURGER
4 bread rolls
lettuce
tomato slices
avocado slices
CHICKEN BREASTS
Mix all the ingredients except the chicken and oil.
Roll the chicken breasts in the mixture.
Heat the oil in a pan and fry the chicken breasts until done and golden.
TZATZIKI
Drain the cucumber and add the yoghurt, garlic, salt and pepper.
Mix well.
BURGERS
Cut the rolls in half.
Arrange lettuce, tomato, avocado and chicken on one half of each roll. Spoon a little tzatziki over the chicken and top with the other half of each roll.
Serve with potato chips.
