Delicious omelette cake

Everyone, including the fussiest toddler, will love this divine omelette cake created by Checkers and Die Nataniël Tafel.

What could be more comforting than a beautiful omelette stack with a delicious cheese filling? Die Nataniël Tafel has come up with a great idea using your favourite cheeses – available now from a wide selection at Checkers.

You need:

  • 8 eggs
  • sea salt
  • coarsely ground black pepper
  • butter or grapeseed oil
  • 50 g Brie
  • a handful of fresh basil
  • 40 g blue cheese
  • 15 ml (1 T) chopped parsley
  • 50 g goat’s milk cheese
  • 30 ml (2 T) chopped chives


Whisk the eggs and season with a little salt and pepper. Heat a little oil or butter in a medium-sized pan. Pour a quarter of the eggs into the pan to make the first omelette. Bake until the top is nearly set, then slide it onto a plate. Break the Brie into pieces and scatter over the omelette, followed by the basil. Bake the next omelette and carefully lay it on top of the first. Break the blue cheese into pieces and scatter over the omelette along with the parsley. Bake the third omelette and lay it on top of the cheese. Break the goat’s milk cheese into pieces and sprinkle on top along with the chives. Bake the last omelette and lay it on top of the stack. Cut into slices and serve warm or at room temperature.
