Easy nachos

Serves 2-5


30 ml olive oil

1 onion, roughly chopped

1 chilli, roughly chopped

2 cloves garlic, roughly chopped

500 g mince

Salt and pepper

2 ml paprika

1 tin (410 g) chopped tomatoes

5 ml soft brown sugar

45 ml chopped coriander

1 tin (410 g) kidney beans, drained

1 large pack nachos

250 ml grated Cheddar cheese



Sour cream

Handful fresh coriander leaves


Heat the olive oil and sauté the onion, chilli and garlic for a few minutes.

Add the mince and fry until just done, season with salt and pepper.

Stir in the paprika, tomatoes, sugar and coriander and simmer for 10-20 minutes, stirring occasionally.

Stir in the beans and season to taste.

Preheat the oven to 200 °C and place half the nachos on a plate.

Spoon half the mince mixture on the nachos and repeat with the rest of the nachos and mince.

Sprinkle with cheese and bake until the cheese has melted.

Serve with guacamole, sour cream and coriander leaves.
