Easy pasta and mince supper

Long day and just a little bit of time to prepare a lovely supper? This will take you just more than 30 minutes to serve

Serves 6

Preparation time: 10 min

Cooking time: 30 min

30 ml (2 T) oil

6 rashers bacon, chopped

2 onions, chopped

4 garlic cloves, chopped

500 g beef mince

2 carrots, grated

60 ml (¼ c) chutney

250 ml (1 c) beef stock

1 can (410 g) chopped tomatoes

3 bay leaves

4 thyme sprigs

12 sun-dried tomatoes

salt and freshly ground black pepper

500 g pasta

handful of basil, torn

1 Heat the oil in a saucepan over medium heat and fry the bacon until done. Add the onions and garlic and sauté until softened.

2 Turn up the heat, add the mince and cook, breaking up any lumps. Add the carrots and chutney.

3 Pour in the stock and reduce the heat to medium. Stir in the tomatoes, bay leaves, thyme and sun-dried tomatoes and simmer for 10 minutes or until the stock has reduced. Season with salt and pepper.

4 Cook the pasta according to the packet instruction until just done. Drain and gently fold into the mince mixture.

5 Serve with the basil sprinkled on top.
