Fancy chicken

This chicken looks and tastes special. Heinz uses cream cheese mixed with herbs and olives for a simple but delicious dish.

Serves 6-8

Preparation time:

15 minutes

Cooking time: 45-50 minutes

230 g cream cheese

60 ml (¼ c) tomato pesto

15 ml (1 T) fresh basil or any other fresh herbs, chopped

8 chicken portions (drumsticks and thighs) with skin and bone

salt and freshly ground black pepper

black olives

30 ml (2 T) olive oil

Preheat the oven to 180 °C. Brush an ovenproof dish with oil.

1 Mix the cream cheese, tomato pesto and fresh basil.

2 Push your fingers under the skin of each chicken piece to lift and loosen it slightly (don’t loosen it completely).

3 Fill the hollows with the cream cheese mixture and secure with a toothpick.

4 Place the chicken in the ovenproof dish and season. Add the olives.

5 Pour the olive oil over and bake for 45-50 minutes or until the chicken is done.

6 Serve with a salad and roasted vegetables.
