Fish stirfry with sweet noodles

Serves 4

Cooking time: 15-20 min

500 g white fish fillets, cubed

salt and freshly ground black pepper

60 ml (¼ c) cornflour

oil for shallow-frying

6 spring onions, roughly chopped

3 cm piece of fresh ginger, peeled and grated

2 cloves garlic, finely chopped

200 g young green beans, halved

juice and zest of 1 small lemon

200 g Asian noodles

15 ml (1 T) sesame oil

30 ml (2 T) sweet soy sauce

Season the fish cubes with salt and freshly ground black pepper and roll them in the cornflour.

Heat the oil and shallow-fry the fish cubes until crisp and done.

Set aside.

Heat more oil and fry the spring onions, ginger and garlic for a few minutes.

Add the green beans and fry over high heat for about 2 minutes.

Return the fish fillets to the spring onion mixture in the pan and season with the lemon juice and zest, salt and freshly ground black pepper.

Cook the noodles according to the packet instructions, drain and set aside.

Heat the sesame oil in a pan and fry the noodles for 1 minute.

Add the sweet soy sauce and fry for a few minutes longer.

Divide the noodles among bowls and spoon the fish mixture on top.
