Flourless pear cake

A very special treat - flourless and ready within an hour

Serves 10

Preparation time: 10 min

Baking time: 40 min

15 ml (1 T) sugar

85 g butter

100 g dark chocolate

125 ml (½ c) caster sugar

30 ml (2 T) liqueur (such as Amarula)

3 eggs, separated

85 g ground mixed nuts

3 pears, peeled and halved

1    Preheat the oven to 180 °C. Grease a 20 cm round baking tin and sprinkle with the sugar to coat.

2    Melt the butter and chocolate in a double boiler or in the microwave, stirring from time to time until smooth. Remove from the heat, stir in the liqueur and set aside.

3    Whisk the egg yolks and sugar in a bowl until pale. Fold in the chocolate mixture and nuts.

4    In a clean glass or metal bowl whisk the egg whites until double in volume or until soft peaks form. Using a metal spoon, fold the egg whites into the chocolate mixture two spoonfuls at a time.

5    Pour the mixture into the prepared baking tin and arrange the pears on top. Bake for 40 minutes.
