Four mushroom pasta

Mushrooms are used in a variety of Italian dishes. This particular pasta dish can be made with up to six types of fresh mushrooms.

Several kinds of mushrooms are available in major supermarkets so use whatever you can lay your hands on.

15 ml butter

15 ml oil

2 garlic cloves

750 g fresh mushrooms of various types, for example 125 g baby button mushrooms, 125 g button mushrooms, 250 g portabellini mushrooms and 100 ml white wine

100 ml chicken stock

salt and pepper to taste

125 ml cream

500 g cooked spaghetti

Heat the butter and oil in a hot pan then add the garlic.

Add the mushrooms in batches and stirfry until slightly brown.

Add the white wine and stock and cook for 3 minutes or until the liquid is reduced by half.

Season to taste with salt and pepper and add the cream.

Cook for 2 minutes, then add the cooked pasta.

Spoon into pasta bowls and serve immediately 50 g brown mushrooms
