Frikadels with mash

Serves 4

500 g extra-lean beef mince

1 onion, chopped

2 carrots, grated

1 large ripe tomato, grated

5 ml ground cumin

7 ml smoked paprika

2 eggs

salt and freshly ground black pepper

3 large potatoes for mash

20 g butter

60 ml milk

oil for frying

1.    Combine the mince, onion, carrots, tomato, cumin, paprika and eggs in a large mixing bowl and use your hands to mix well.

2.    Season with salt and pepper, and set aside in the fridge

3.    Peel the potatoes and cut into chunks. Put the potatoes in a large pot, cover with cold water and add salt. Bring to the boil and cook until soft.

4.    Drain the potatoes and add the butter and milk. Mash together and season.

5.    Shape the mince mixture into small balls. Heat some oil and fry the frikadels in batches until golden brown and cooked. Serve with the mash.
