Fruit crumble with ginger custard

A delicious warm treat to drive the winter blues away

Serves 6

Preparation time: 10 min

Cooking time: 1 hour


135 g butter, chopped

375 ml (1½ c) flour

250 ml (1 c) caster sugar

3 green apples, peeled and quartered

300 g frozen mixed berries

1 lemon


500 ml (2 c) milk

125 ml (½ c) double cream

6 egg yolks

60 ml (¼ c) caster sugar

15 ml (1 T) ground ginger

5 ml (1 t) cinnamon

15 ml (1 T) cornflour

1    Crumble: Preheat the oven to 180 °C and grease an ovenproof dish.

2    Rub the butter, flour and sugar in a bowl with your fingertips until the mixture resembles breadcrumbs.

3    Put the apples and berries in a bowl, squeeze the lemon over the fruit and tip into the prepared ovenproof dish. Top with the flour mixture and bake for 40 minutes or until the crumble is golden on top.

4    Custard: Heat the milk and cream in a saucepan over medium heat.

5    In a large bowl whisk together the egg yolks, sugar, ginger, cinnamon and cornflour. When the milk mixture is warm, add it to the yolk mixture a spoonful at a time, stirring constantly. Pour the custard into the pot, whisking, then return to the heat for 10 minutes.

6    Serve the custard with the fruit crumble.
